It’s day 11 of my keto journey, and I’m happy, but not surprised with the results.

The morning started off with one of my favorite rituals: cheese. I indulged in 52 grams of extra sharp Tillamook cheddar, savoring every bite as I prepared for the day ahead. There’s something about the rich, creamy flavor that sets the tone for a successful day.

As mid-morning rolled around, I found myself craving something hearty and flavorful, so I decided to treat myself to some chili verde from Taco King. It’s a delicious keto-friendly option that never fails to satisfy my taste buds.

By lunchtime, I was ready for something refreshing, so I cracked open a lime Spindrift to enjoy alongside another serving of cheddar cheese. It’s amazing how something as simple as sparkling water can elevate a meal and add a burst of flavor.

In the evening, I opted for a more substantial dinner of a 6-ounce fillet of fish paired with asparagus. It’s a light yet satisfying meal that leaves me feeling nourished and satisfied. And of course, I couldn’t resist indulging in a single serving of dark chocolate with almonds and sea salt for dessert. It’s the perfect way to end the day on a sweet note without straying from my keto goals.

As I reflect on my journey so far, I’m reminded of the importance of balance and mindfulness. By listening to my body’s cues and making choices that align with my goals, I’m able to thrive on this keto journey.
